Ingredients:
-> 1 pound boneless, skinless chicken breast halves
-> 1 teaspoon olive oil
-> 2 Granny Smith apples
-> 1 tablespoon extra virgin olive oil
-> 3 large stalks celery
-> 3/4 cup red seedless grapes
-> 1/4 cup dried cranberries (loosely packed)
-> 1 cup roughly chopped walnuts
Dressing:
-> 1/2 cup fat-free plain yogurt
-> 1 tablespoon agave syrup or honey
-> 1/4 teaspoon coarse kosher salt
-> 1/4 teaspoon pepper
Directions:
-> Sauté the chicken breasts in a sauté pan in olive oil for approximately 7 minutes on each side. Cool and cut into bite-sized cubes.
-> Add the extra virgin olive oil to the bottom of a large bowl. Cut the apples into quarters, removing the core from each wedge, then cut the wedges into bite-size cubes. Toss the cubes into the olive oil to coat them to prevent browning.
-> Chop the celery diagonally into 1/4-inch slices and add it to the apples. Next, add the chicken, grapes, cranberries and walnuts.
-> In a small bowl, whisk together the dressing ingredients. Pour the dressing over the chicken mixture, and toss together.
