Chicken Waldorf Salad

Ingredients:


-> 1 pound boneless, skinless chicken breast halves
-> 1 teaspoon olive oil
-> 2 Granny Smith apples
-> 1 tablespoon extra virgin olive oil
-> 3 large stalks celery
-> 3/4 cup red seedless grapes
-> 1/4 cup dried cranberries (loosely packed)
-> 1 cup roughly chopped walnuts

Dressing:
-> 1/2 cup fat-free plain yogurt
-> 1 tablespoon agave syrup or honey
-> 1/4 teaspoon coarse kosher salt
-> 1/4 teaspoon pepper

Directions:


-> Sauté the chicken breasts in a sauté pan in olive oil for approximately 7 minutes on each side. Cool and cut into bite-sized cubes.

-> Add the extra virgin olive oil to the bottom of a large bowl. Cut the apples into quarters, removing the core from each wedge, then cut the wedges into bite-size cubes. Toss the cubes into the olive oil to coat them to prevent browning.

-> Chop the celery diagonally into 1/4-inch slices and add it to the apples. Next, add the chicken, grapes, cranberries and walnuts.

-> In a small bowl, whisk together the dressing ingredients. Pour the dressing over the chicken mixture, and toss together.

Copycat Panera Tuna Salad Sandwich Recipe

Ingredients
  • 1 can drained Tuna
  • 1½ tsp Mayonnaise
  • 1 tsp Sweet Relish
  • ¾ tsp Dijon Mustard
  • Salt and Pepper to taste
  • Honey Wheat Bread
  • Sliced Red Onions
  • Sliced Tomatoes
Instructions
  1. Mix tuna, mayonnaise, relish and mustard in a bowl.
  2. Refrigerate for at least 15 minutes.
  3. Serve on honey wheat bread with leaf lettuce, slice red onion and sliced tomato.

Roasted Carrot Hummus Recipe



I’ve been a bit passionate on roasted carrots lately & never construct any furtive of my love of legumes, so combining the two is a marriage made in ecstasy in my book.  I had 2 cans of chick peas on give and a few carrots in the back of the veggie bin, so I figured I would try making a recipe for Roasted Carrot Hummus.

Ingredients
  • ½ pound carrots
  • 2 garlic cloves
  • ¼ cup + ½ tsp olive oil
  • ¼ tsp + ½ tsp Kosher salt
  • 2 (15-16 oz) cans chick peas (garbanzo beans)
  • ¼ cup Sesame Tahini
  • ⅔ cup water
  • ⅓ cup fresh lemon juice

Instructions
  1. Preheat oven to 400 degrees.
  2. Peel carrots. chop off ends and slice on the diagonal into approx 1 inch thick pieces. Peel garlic cloves.
  3. Mix the carrots & garlic in ½ tsp oil and ¼ tsp Kosher salt. Lay out on shallow oven safe pan or baking sheet. Roast for 12 minutes, mix them up, and return to oven to roast 8 more minutes. Then set aside to cool.
  4. Add the roasted carrots and garlic to food processor, along with all the remaining ingredients. Pulse until smooth
